Paolo Vodopivec’s vineyards are located in very close proximity to the border of Italy and Slovenia in the unique area of Carso, home to the white Vitovska grape varietal. Vodopivec focuses solely on this one grape, and takes and extraordinarily hands-on approach, from vineyard to cellar.
The season, which began with obstacles and complications, found its way to express itself with full satisfaction in a fine and elegant stretch. The harvest by hand takes place on 24 and 25 September, and allows you to enjoy September days that reflect the beauty of the period. The grapes macerate for fifteen days with frequent daily punching down before undergoing the pressing in the traditional way.
