GRAPE: 35% Corvina, 20% Rondinella, 35% Corvinone, 10% other local varieties
VINIFICATION: Harvested in the autumn, to create this luscious dessert wine, the grapes are dried for about 6 months before temperature controlled fermentation. The wine ages in new barriques Franch Oak for about 36 months and after the bottling other 24 months.
TASTING NOTES: Deep garnet, notes of stewed cherries, chocolate, coffee, violet, prunes and dried blackberries. Smooth and seductive, with an appealing sapidity and an optimal acidity and bright notes of ripe fruits and spices.
HOW AND WHEN: Compliments both desserts and rich finishes to a meal, including blue cheese, chocolate and chocolate cake, biscuits, and cacao.
